Sweet Potato Gnocchi with Broccoli Rabe and Spicy Chicken Sausage

This was the first time we made sweet potato gnocchi, or gnocchi's at all for that matter! I was always curious how to make them and figured it couldn't be that different from making pasta or bread. It is really quite similar to making pasta, just with different ingredients. If you're in a hurry or pinch of time, this is a quick and easy recipe. It is an ultimate comfort food dish and will be sure to bring a smile across your face when you take the first bite. You can serve with your choice of toppings or sauce. We went with broccoli rabe for it's taste of bitterness to compliment the sweetness of the sweet potato and a spicy chicken sausage. For an herb, I'd recommend sage as it goes well with sausage and leaves a note of citrus and pine earthiness.

Ingredients

  • 1 lb Sweet Potato (cooked)

  • 2 Tbsp of Fresh Sage

  • 8 Tbsp Butter

  • 2 Garlic Cloves

  • 8 oz of Whole Milk Ricotta Cheese

  • 1/4 Cup Shredded Parmesan Cheese

  • 1 1/2 Tbsp Sea Salt of Himalayan Salt

  • 1 1/4 Cup of Flour

  • 1 lb Spicy Chicken Sausage

  • 1/4 Cup Heavy Cream

  • 6 Cups Broccoli Rabe


Instructions

First step, start the gnocchi! Take a large mixing bowl and empty out the sweet potato, removing the skin and place the filling in the bowl.

Add the 8 oz of Ricotta Cheese and the 1/4 shredded Parmesan cheese to the bowl and mix well with the sweet potato and add the salt.


Next add your flour, sifting and adding a little at a time while folding in. Add the whole 1 1/4 cup. Set aside. This is your gnocchi dough! Getting close!!


Prepare a smooth clean surface and sprinkle with flour. Take your gnocchi dough and knead until smooth and soft and shape into an oval.


Next, take a knife and slice the dough, vertically piece by piece, almost as if cutting a slice of banana bread and take each cut piece and sprinkle with flour and roll into a long rope-like thickness.


Next, cut the rope-like long dough inch by inch and set aside. These are your gnocchi's!!

(try to keep in cool area so the dough does't clump and stick together like what happened to ours!! Also, probably not a good idea to place uncooked gnocchi dough in a bowl-keep on flat floured surface- Pretty much made sweet potato dumplings, but still tasted amazing!)


Take a large pot of water and bring to a boil. Add salt and a little olive oil and add your gnocchi's. They will be finished cooking as soon as they rise and float to the top. Drain the gnocchi and set aside. Add a little olive oil to prevent sticking, we added a little garlic powder to ours for extra flavor!


Clean and steam your broccoli rabe and set aside.


Take your chicken sausage, add the butter, sage, and garlic to a frying pan and cook the sausage to a nice crispy brownness. Cut and slice the sausage to a bit size consistency. Add the cooked broccoli rabe and heavy cream, mix and stir well. This is the topping and sauce for your gnocchi. Make with your favorite salad to accompany! Enjoy!
