Chicken Piccata is a traditional Italian dish that is typically made with veal, but there are a few variations and chicken can be used. Piccata actually means thin slices of meat, dredged in flour and cooked in a lemon, butter, caper white wine sauce. We used chicken thighs and gluten-free flour for our dish and it turned out delicious and zesty! This is a quick dinner and is filling and comforting. Enjoy a taste of Italy in your nest!

Ingredients:
8 Chicken Thighs
1 Cup of Gluten-free Flour
1 Tablespoon Organic Extra Virgin Olive Oil
Sea Salt or Pink Himalayan and Ground Black Pepper to taste
Italian Dry Herbs/Seasoning
3 Tablespoons Grass Fed Butter
4 Cloves of Garlic, Minced
1/4 Cup Dry White Wine (Chardonnay preferred)
Juice of 2 Lemons
3 Tablespoons of Capers
1 Lemon Sliced
Instructions:
Dredge the chicken in the gluten-free flour and place in the skillet over medium-high heat in the olive oil. Season chicken with Italian herbs, salt and pepper. Cook on each side about 10 minutes and until golden brown and not pink inside. Transfer the chicken to a plate and set aside.
Reduce the remaining oil and chicken juice to low. Add the butter, garlic, white wine, lemon juice, capers and bring to a simmer.
Add the cooked chicken to the skillet and add the lemon slices on top, simmering with the lid on for 20 minutes on medium-low heat.
Serve over top of brown rice or pasta of choice. Orzo is delicious too!
