Red Lentil Soup

Red Lentil Soup


1lb Dry Red Lentils

4 Cups of Chicken Stock (Unsalted)

5 Stalks of Celery

3 Carrots

2 Garlic Cloves (Minced)

1 Small Red Onion (Diced)

2 Tablespoons Olive Oil

Sea Salt/Pepper

1 Tablespoon of Red Curry Pepper Paste

1 Teaspoon of Garlic Powder







  • Soak lentils in water for a couple of hours

  • In a large pot or Dutch oven bring chicken stock to a boil add the olive oil and salt and pepper with a dash of garlic power

  • add the soaked red lentils to the boiling stock and add a cup of water

  • Add carrots and celery and garlic, onion

  • Simmer on medium heat for a couple of hours

  • Add the tablespoon of red curry paste and stir well

  • Pour soup over top of healthy quinoa or brown rice

  • Top with arugula or your favorite salad and a poached egg and enjoy!
