Beef Bolognese Stuffed Shells with Ricotta and Spinach

This is one of those sleepy Sundays kind of comfort dinners! For the most part, we like to keep our recipes healthy and clean, but every once in a while it's nice to indulge! Just work out a little harder the next day, you know? Listed below are the ingredients and a video on the process.


"Bon Nest Appetit"


Ingredients:


  • 1lb Ground Grass-Fed Beef

  • 1 Small Onion- red or yellow

  • 2 Tablespoons Olive Oil

  • 1 Can of tomato paste

  • 4 Cups of tomato sauce

  • 1 tsp of Italian Seasoning

  • 1 tsp Turmeric

  • 1 tsp Cumin

  • 15 oz of Ricotta Cheese (1 part-skim milk)

  • 8 oz of Mozzarella Cheese

  • 6 oz Parmesan Cheese

  • 1 Box of Large Shell Pasta

  • Salt and Pepper to taste

  • 2 Eggs

  • 2 Cups of Spinach finely chopped


  • In a medium sauteing pan, heat olive oil and add diced onion, and saute until onions sweat. Add the ground beef and stir, adding turmeric, cumin, Italian seasoning, salt, and pepper to taste. Once the beef is cooked through, add the can of tomato paste and 2 cups of tomato sauce and simmer on low for 20 minutes.

  • Next, grab a large mixing bowl and mix in the Ricotta cheese, 2 eggs, Mozzarella, 3 oz of Parmesan, salt, pepper and stir well. Add in your finely chopped fresh spinach and mix thoroughly. Set aside.

  • In a large pot, add water almost to the top of the pot and boil. Add salt and olive oil, slowly add in your large shells and cook to desired softness or al dente. Once cooked through, drain shells and cool on a cookie sheet for a few minutes until they've cooled down.

  • Next, take your cheese and spinach mixture in the bowl and with a teaspoon scoop out the filling and place in each cooled shell. Take each shell after stuffing and place them face-up on your baking pan. Line your baking/casserole pan with a little olive oil and a tablespoon of tomato sauce and spread evenly across to prevent any burning at the bottom layer.

  • Take your bolognese sauce and the remaining 2 cups of tomato sauce and use a large spoon to top the shells off with the sauce. Take your remaining Parmesan cheese and sprinkle on top of the bolognese sauce and shells. Top off with a sprinkle of Italian seasoning.

  • Take the foil and cover your casserole dish and shells and place it in the oven at 350 degrees and bake for 45-50 minutes. Less time if your casserole dish is smaller or if you like them less crispy on top. We cooked ours for about 40 minutes.

  • Serve with a healthy mixed green salad and your choice of beverage and enjoy it!
